We're still hunkered down here at CHR while the snow falls, but hopefully you're in your apartment home safe and warm. Here's a recipe that we stumbled on from Eating Well for Thick & Rich Hot Cocoa that's just perfect for the snowy weather. We've tried it in our CHR Test Kitchens and just had to share. It's only 98 calories a serving and really satisfies that need for chocolate.
2 1/4 Cups Nonfat Milk
1/2 Cup Unsweetened Cocoa Powder
1 1/2 Tablespoon Cornstarch
Combine milk, cocoa, sugar, and cornstarch in a large saucepan. Cook over medium heat, whisking often, until steaming. Continue to cook, whisking constantly, until it comes to a boil. Remove from heat and serve in espresso cups. Serves 6, 1/3 cups.
This is a really rich version of hot cocoa. You can add a dash of vanilla, grated orange or lemon peel, or even instant coffee for subtle favors. We tried it with a dash of cinnamon and cayenne to make it a spicy treat. So good you can eat this with a spoon! No really, if you have a tiny spoon we definitely suggest using it since it's that thick.
